DIM Sum is best enjoyed in a group. With the many small servings, you get to taste a wide range of flavours and textures, from steamed and fried to sweet and savoury.
At The Emperor Chinese Restaurant in Dorsett Grand Subang Hotel in Subang Jaya, Selangor, the dim sum menu is frequently updated for the benefit of regular diners.
This also lets the chef test diners’ preferences and decide if an item should stay on the menu.
Among the offerings this time are Deep-Fried Yam Dumpling with BBQ Chicken, Steamed Blue Pea Flower Prawn Dumpling, Deep-Fried Crab Meat with Salad Dumpling, and Steamed Anchovy Dumpling in “extraordinary sauce”.
The first dish, Steamed Blue Pea Flower Prawn Dumpling, reminds me of a yam basket – but bite sized – with its crisp exterior and soft interior encasing barbecued chicken.
The hotel’s executive Chinese chef Soon Seng Lee said dim sum generally comprised the same ingredients, so tweaks created a new experience for fans.
The Deep-Fried Crab Meat with Salad Dumpling is crisp with tender crab meat within.
Among the standouts is the flavour-packed Steamed Anchovy Dumpling.
The umami of the anchovies complemented the house-made secret sauce, leaving a lingering savouriness and thoughts of nasi lemak.
The clear Double-Boiled Chicken Soup had an earthy aroma from the morels which enhanced its sweetness.
Fish lovers will enjoy the Dual-Style Cod Fish with Soy Sauce, where the fish is steamed for a tender and delicate bite and fried in another form.
Both styles were elevated by a light soy-based dressing.
Seafood lovers will also enjoy the Wok-Fried Prawn Meat with Garlic and Broccoli.
For something unusual and impressive, there is the Braised Water Prawn and Flying Egg Noodle with Egg White Sauce.
The silky noodles coated in eggy sauce tie everything together.
To end the meal, go for the crisp and golden Deep-Fried Musang King Durian.
Overall, the menu is a journey of flavours, textures and techniques blending tradition with creative flair.
Prices start from RM12+ per dish. The new menu is available from November for lunch, including on weekends and public holidays.
